You can do more than just drink coffee
and here are 5 ways to cook with coffee that I GUARANTEE you’ve not done before!
1 - COWBOY COFFEE BBQ RUB
INGREDIENTS:
- 2 tbsp brown sugar
- 1 tbsp finely ground coffee beans
- 1 tbsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp cumin
- 1/2 tsp dried chilli flakes
METHOD:
Simply mix together all the ingredients and rub liberally over the meat of your choice.
Leave to infuse at room temperature for 20 minutes
Cook on the BBQ until cooked to your degree of done-ness!
2 - COFFEE BUTTER
INGREDIENTS:
- 2 cups double cream
- 3/4 cup finely ground coffee
- 2 tbsp icing sugar
- 1/2 tsp sea salt
- Cheesecloth (to strain the butter)
METHOD:
In a tall airtight container, add the double cream and mix in the ground coffee until combined. Close the lid and refrigerate overnight.
Strain the coffee mixture, making sure to push through as much milk fat as possible, while keeping out the sediment.
Discard the ground coffee and transfer the strained liquid into a food processor.
Add the sugar and sea salt and spin the mixture until the fat forms into butter and the liquid separates.
Transfer the mixture onto a large cheesecloth and wring out the remaining liquid.
Use immediately or store in the fridge for when you need it.
3 - MAPLE & COFFEE GLAZED BACON
INGREDIENTS:
- 12 slices streaky bacon
- 1 shot espresso
- 1 tbsp maple syrup
- 2 tbsp dark brown sugar
METHOD:
Preheat your oven to 175ºC and line a baking sheet with parchment paper.
Mix together the ingredients in a small bowl until combined and the sugar is mostly dissolved.
Lay out the bacon evenly across the baking sheet.
Using a brush, brush half of the glaze onto one side of the bacon.
Bake in the oven for 10 minutes.
Remove from oven, turn up the heat to 200ºC
Flip over the bacon and brush with the remaining glaze.
Put the bacon back into the oven and bake for another 10-15 minutes.
4 - MOCHA HOT FUDGE SAUCE
INGREDIENTS:
- 1/2 cup butter
- 4 oz milk chocolate
- 5g finely ground coffee
- 3/4 cup cocoa powder
- 2 cups sugar
- 1/2 cup milk
- 1/2 cup whipping cream
METHOD:
In a bain marie add the butter, chocolate and coffee. Stir until combined.
Add the cocoa powder and whisk until combined.
Stir in the sugar in 1/2 cup increments. Stirring occasionally and cook for 20 minutes.
Stir in milk and whipping cream until completely combined.
Continue cooking and stirring occasionally until sugar is completely dissolved and sauce is smooth.
5 - COFFEE VINAIGRETTE
INGREDIENTS:
- 1/3 cup olive oil
- Sea salt and freshly ground black pepper
- 3 tbsp sherry vinegar or red wine vinegar
- 1 tsp honey
- 1 tsp finely ground coffee
METHOD:
Whisk vinegar, honey and coffee in a bowl until honey and coffee are dissolved.
Gradually add oil, whisking constantly.
Season with salt and pepper to taste.
